The Escort COOL DOWN Temperature
Recorder was developed to assist
organisations in complying with
regulations set by the United States
Federal Food and Drug Administration
regarding the cooling process of cooked
meat. The FDA state that once food has
cooled to temperatures below +60°C, it
must be cooled down to below +5°C within
6 hours.
The COOL DOWN logger uses an
external sensor to monitor the cooling
of processed food. The logger is
triggered by the temperature falling
below +60°C, and the logger records the
time and date of this event. The COOL
DOWN process is then monitored by taking
three temperature readings: One after 2
hours when the food must have cooled to
temperatures below +21°C, the second
after 4 hours and the third reading
after 6 hours, when temperature should
be below +5°C.
At the end of this process, the
COOL DOWN logger displays a PASS or FAIL
message depending on whether the
temperature restrictions have been
achieved in the specified time frame.
The unit does not require to be
downloaded to a PC, which is useful for
areas which do not have easy access to a
PC (e.g. kitchens).
